Try and picture the warm waters of the south west Pacific Ocean lapping the east coast of New Zealand's Far North. Imagine a huge dry lake bed littered with the burnt out remains of a 30,000 year old giant kauri tree forest. Since the demise of the kauri gum trade, only the ghosts of long dead Maori and European diggers roam the rich green dairy farms surrounding Lake Ohia.

Now a new crop springs from the rich black peat soils and stretches towards the hot southern sun. Capsicum frutescens, the basic ingredient in Kaitaia Fire chil sauces.
